Hummus and flavorful vegetables top a thin pizza crust for a satisfying meatless dish

Recipe Ingredients for Mediterranean Hummus Pizza

2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
0.25 medium raw Onion Red
1 cucumber (8-1/4") Cucumber
4 oz Greek Kalamata Olive Bar
7 oz Original Hummus
2 oz Reduced Fat Basil and Tomato Feta Crumbled

Recipe Directions for Mediterranean Hummus Pizza

  1. Preheat oven to 425 F. Brush a large pan with 1/2 tsp olive oil. Unroll pizza dough onto the pan, gently stretching and pressing the dough to cover the bottom of the pan. Combine remaining oil & finely chopped garlic and brush evenly over the dough. Bake 12-14 minutes or until the crust is a light golden brown.

  2. Meanwhile, for toppings, cut artichokes crosswise into smaller pieces. Slice tomatoes and dice. Thinly slice onion. Slice cucumber and cut into quarters. Coarsely chop olives.

  3. Remove pan from oven. Spread hummus evenly over pizza crust. Arrange artichokes, tomatoes, onion, cucumber and olives over hummus. Sprinkle with cheese. Cut pizza into squares and serves.

  4. Tastes great while pizza crust is still warm. Also tastes great for a next day lunch/leftover.
