Mediterranean Greek Pasta Recipe

This is an awesome low calorie dish that you can make a huge batch of and eat for lunch for a week. This is my version of what I saw Giada DeLaurentis cook on her show, Everyday Italian.

Recipe Ingredients for Mediterranean Greek Pasta

1 large tomato, diced
1 medium zucchini, sliced
1 medium squash, sliced
7 1/2 oz. artichoke hearts
3 tbsp garlic, minced
1 1/2 cups frozen spinach, chopped
1/4 cup lemon juice
2 1/4 oz. kalamata olives, sliced
1 large red bell pepper, chopped
1/2 large red onion, chopped
1 tsp salt
1 tsp pepper
1 tbsp basil, minced
1 chicken breast, large, diced
12 oz. penne pasta
1/2 cup feta cheese, crumbled

Recipe Directions for Mediterranean Greek Pasta

Combine first 13 ingredients in a shallow baking pan and bake at 400 degrees for 20 minutes. During this time, you can start your water boiling for the pasta, as well as prepare your chicken breast. I cook my chicken in a pan with a tbsp. of olive oil and some minced garlic, topped with garlic salt and dried basil, but you can cook your chicken any way you want. As soon as the water is at a rapid boil, add the penne pasta and cook until al dente (about 12-15 minutes depending on type of pasta). After the vegetables have been baking in the oven for 20 minutes, put them in the broiler and broil until the veggies start browning on top (about 20 minutes depending on the intensity of your broiler). I actually bake and broil right in my toaster oven. Once the veggies are finished, in a large bowl, combine veggies, chicken (diced) and pasta (once drained). Add the feta cheese and mix it up good with two large spoons. Can serve either hot or cold. I like some Frank's Original Red Hot on mine!!! ENJOY!
