Recipe Ingredients for Mediterranean Flatbread Pizza

1 slice pita, wheat
1/2 cup shredded monterey jack cheese
3 cherry tomatoes, sliced thin
8 slices pepperoni, turkey
1 tbsp olives, tapenade
1 tsp olive oil
1/8 tsp sea salt
1/8 tsp pepper

Recipe Directions for Mediterranean Flatbread Pizza

  1. I love the Pita from Phoenicia Bakery - it's super thin, flat, and larger than normal pita pockets you might see. They sell it at Whole Foods and other smaller organic markets.

  2. Brush the wheat pita with some olive oil, sprinkle a bit of sea salt and pepper on top, and toast it in the broiler for a minute or two, or until brown

  3. Sprinkle bits of the olive tapenade all over, cheese, sliced tomatoes, turkey pepperoni, a bit more tapenade, and toast again until cheese is melted and the pizza begins to brown on top. 2 to 3 minutes.
