It is like being able to eat baba ganoush and hummus dip.. but solid.

Recipe Ingredients for Mediterranean Dip Bake

1 eggplant
1 pinch salt
1/4 t. pepper
1/4 t. cumin
1 T sesame oil
1/2 cup hummus
1 T lemon zest
1/2 c lemon juice

Recipe Directions for Mediterranean Dip Bake

  1. Preheat oven to 400 degrees

  2. Cut the ends off of the eggplant and then split down the middle. Score the eggplant.

  3. Brush eggplant with sesame oil then sprinkle salt, pepper, cumin and lemon zest on to the flesh.

  4. Bake in oven for 30 minutes or until eggplant starts to get tender.

  5. Take out of oven and squeeze lemon juice onto eggplant and then spoon hummus on to the eggplant.

  6. Return eggplant back to the oven and bake fore another 15 minutes.

  7. After 15 minutes, take out the dish and serve eggplant halves.
