Flavorful couscous with typical Medditerranean type ingredients

Recipe Ingredients for Mediterranean Couscous

1 cup Israeli Couscous
2 cups Kale
3 cloves garlic, chopped
1 tablespoon olive oil
2 ounces feta cheese, cubed
2 ounces kalamata olives, halved
1 roma tomato
1/2 cucumber
1/2 teaspoon oregano leaves
1/2 tablespoon lemon juice

Recipe Directions for Mediterranean Couscous

  1. Boil 1 1/2 cups of water. Add couscous, return to boil then remove from heat. Cover and let stand about 10-15 minutes. Once it is cooked, stir it and allow it to cool for another 15 (or more) minutes.

  2. Cut kale leaves from stalk/ spine, and chop or tear into 1-2 inch strips or pieces (does not have to be exact, don't chop too small). Heat olive oil in a saute pan over medium heat. Add kale and cover, checking and stirring every couple of minutes. Kale will cook down, and if it browns a little, that's OK. Saute until the kale is cooked down to about 1/3 or 1/4 and is a dark green. Add garlic, saute for another 2 minutes stirring occasionally. Remove from heat and set aside, allowing it to cool.

  3. Chop/ cube the tomato and cucumber.

  4. In a large bowl, mix the the vegetables, olives, feta, couscous, oregano, and lemon juice. Toss well and refridgerate for about 20 or 30 minutes.
