3 cups dry couscous
2 cups chicken broth
5 shots dry vermouth
1/2 cup water
1/2 cup dried apricots
3/4 cup sun-dried tomatoes
1/4 cup dried cranberries

Recipe Directions for Mediterranean couscous with dried fruit

  1. Combine wet ingredients, bring to boil.

  2. Add dried fruits, couscous. Turn off heat and cover.

  3. Wait 5 minutes, fluff and serve.
