Recipe Ingredients for Mediterranean Chopped Salad Best of America

1 cucumber
1 l/2 cups grape tomatoes
3 tbsp extra virgin olive oil
3 tbsp red wine vinegar
1 garlic clove
15 oz can chickpeas
1/2 cup pitted kalamata olives
1/2 small red onion
1/2 cup chopped parsley
212 g romaine heart,
1 cup feta cheese

Recipe Directions for Mediterranean Chopped Salad Best of America

  1. Seed, peel, halve lengthwise cut into 1/2 inch pieces.

  2. quater grape tomatoes

  3. mince garlic

  4. drain and rinse chick peas

  5. chop olives

  6. mince red onion

  7. chop parsley

  8. cut romaine into 1/2 pieces

  9. crumble feta

  10. Combine cucumber, tomatoes, and 1 teaspoon salt in a colander set over a bowl and drain for 15 minutes.

  11. Whisj the oil, vinegar and garlic together in a large bowl. Add the drained cucumber and tomaotes, chickpeas, olives, onion and parsley. Toss and let stand at room temperature to blend the flavours, 5 minutes.

  12. Add the romaine and feta and toss to combine. Season with salt and pepper to taste and serve.
