Quick easy meal with a sunny Mediterranean feel. Good source of calcium, iron and vitamins. Garbanzo beans (chickpeas) can be substituted for the olives to reduce the fat level.

Recipe Ingredients for Mediterranean Chicken

1 tsp olive oil
1/2 lbs boneless skinless chicken breasts
1/2 medium onion, chopped
1 medium zucchini, chopped
1 clove garlic, minced
100 g. chopped green olives
200 g. chopped canned tomatoes
1 tbsp capers

Recipe Directions for Mediterranean Chicken

Heat oil in non-stick pan. Add onion & cook until soft - 7 to 8 mins. Add garlic & continue to cook 1 min. Add chicken (whole or pieces) & cook for 5 mins. Add all other ingredients, cover and cook for 30 mins. on low heat until chicken is fully cooked. Serve with basmati rice or bulgur wheat for a filling, healthy meal.
