This recipe is heavy on the cheese, but oh so yummy. Cheri from our Prism group shared it with us.

Recipe Ingredients for Mediterranean Chicken & Brown Rice Casserole

12 ounces chicken breast, 2 large
1/2 c. shredded swiss cheese
3 cups cooked brown rice
4 cups fresh spinach, 1/2 bag
28 ounces crushed tomatoes
1 1/2 cups sliced fresh mushrooms
1 medium onion, chopped
4 cloves garlic, diced very small
1 T. olive oil
1/4 cup fresh basil, chopped
2 t. dried oregano
1/4 c. parmesan, fresh shredded
1/2 c. mozzarella

Recipe Directions for Mediterranean Chicken & Brown Rice Casserole

  1. Put olive oil in large cold skillet.

  2. Add garlic and onion.

  3. Turn heat to medium (makes the garlic flavor really come out).

  4. When garlic has started to soften, andd mushrooms and chicken and cook for 3 minutes.

  5. Add tomatoes, turn heat on low and simmer for 20 minutes.

  6. Remove chicken and chop into bite sized pieces to add back in later.

  7. Add oregano, basil and swiss cheese and stir.

  8. Then add remaining ingredients except parmesan and mozzarella.

  9. Mix thoroughly.

  10. Place in large baking dish and sprinkle with remaining cheeses.

  11. Bake at 350 degrees for 25 minutes.
