Recipe Ingredients for Mediterranean Breakfast Sandwich

2 slices sourdough bread
2 slices Genoa Salami - Sliced
.5 oz part-skim mozzarella
2 slices tomato
1 medium egg
1 tsp pimentos
1 tsp capers
1 salt
1 pepper
1/2 oz Fat Free Balsamic Vinaigrette

Recipe Directions for Mediterranean Breakfast Sandwich

Lightly warm bread on grill. Remove and rub with garlic clove cut in half. Mix egg, pimentos, capers, salt, and pepper in a glass or bowl and beat thoroughly, cook till firm on one side then flip and cook until done. Layer 2 slices of salami, 1 slice part-skim mozzarella cheese, and scrambled egg on bread. Top with other bread slice and toast on the foreman until golden grill marks appear. Add tomato slices and balsamic and serve.
