Recipe Ingredients for Mediterranean Barley and Lentil Salad

1 cup Barley, Pearled
1 cup Red Lentils
50 grams Krinos Pitted Kalamata Olives
2 oz Feta Cheese, Fat Free
0.25 cup chopped Red Onion
1 tsp Garlic
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
2 oz VIGO MARINATED ARTICHOKE
8 tbsp Girard's Greek Vinaigrette Dressing
1 carrot (7-1/2") Carrots

Recipe Directions for Mediterranean Barley and Lentil Salad

  1. In 2 separate pots, boil 4 c water

  2. Add barley to one pot, red lentils to the other

  3. Boil for 10-12 minutes, check for tenderness, drain

  4. Chop red onion, cut carrot julienne style, chop olives, chop red pepper, chop artichokes

  5. Add Greek vinaigrette dressing, minced garlic and crumbled feta

  6. Mix and serve (1/2 c servings)
