Recipe Ingredients for mediterranean baked pasta

8 oz penne
1/2 c chicken stock
1/2 c onions
1 t olive oil
4 cloves garlic, chopped
56 oz diced tomatoes
2 t tomato paste
1 t black olives, chopped
1 t sugar
2 t parsley, chopped
1/2 t thyme
1/2 t basil
1/2 c mozzarella, shredded

Recipe Directions for mediterranean baked pasta

  1. *preheat oven to 350* Coat 3-qt cassarole dish with nostick spray. Cook penne according to directions and place into dish.

  2. Mean while, in 10" skillet, combine chicken stock, oil, onions and garlic. Bring to boil over med-high. Cook and stir 2 min. Add tomatoes, tomato paste, olives, and sugar. Cook and stir 5 min. Remove from heat. Add parsley, thyme, and basil. Pour over penne; top with the mozzarella.

  3. Bake 15 min, or til thick and cheese is melted.
