Omelet filling using roasted vegetables. Optionally, feta cheese may also be added

Recipe Ingredients for Mediterannean omelet

200 g chopped red bell pepper
200 g zucchini, diced
200 g summer squash, diced
200 g onion, diced)
3 tablespoons balsamic vinegar
3 teaspoons olive oil
3 c egg substitute
112 g feta cheese
224 g salsa

Recipe Directions for Mediterannean omelet

  1. Arrange bell pepper, zucchini, yellow squash and red onion in a single layer on a foil lined baking sheet. Broil for 12 minutes or until the vegetables are browned. Spoon into a bowl and drizzle vinegar and oil over the vegetables; toss to coat.

  2. Prepare omelets (preferably with an egg substitute such as Egg Beaters) and use 1/4 of the vegetable filling, plus added crumbled feta cheese for each omelet; fold over and transfer to serving plate. Top with salsa if desired
