Recipe Ingredients for Mediteranian Shrimp Pasta

3 tbsp olive oil
1 med onion, chopped
2 cloves garlic, minced
175 g uncooked rotelle pasta, whole grain
3 cups low sodium chicken broth
1 cups asparagus, stemms removed, tips only
1 lb raw medium shrimp, shelled and deveined
3/4 cups cherry tomatoes, halved
1/2 cup pitted ripe olives
1 tsp dried oregano
1 tsp dried basil
1 salt to taste
1 pepper to taste

Recipe Directions for Mediteranian Shrimp Pasta

In a large skillet heat olive oil over medium heat till hot. Add onions and garlic and cook till onions are soft but not brown. Add pasta, stir to coat with olive oil. Increase heat to high, pour in chicken broth. Bring to a boil, reduce heat and simmer till pasta is al dente. Add asparagus, cook, stirring frequently till tender crisp. Add shrimp, olives, oregano, basil, salt and pepper to taste. Cook, stirring frequently until liquid is almost completely absorbed and shrimp are opaque. (do not overcook shrimp). Stir in tomato halves just before serving.
