Recipe Ingredients for mediteranean veg

1/4 tsp oil
2 spring onions
2 tsp garlic
4 tomatoes
1 red pepper
100 grams mushrooms
2 tbsp basil
1/4 cup olives

Recipe Directions for mediteranean veg

  1. Roughly chop spring onions, red pepper, tomatoes & olives.

  2. Slice mushrooms.

  3. Grate or finely chop garlic.

  4. Lightly spray pan with oil.

  5. Add spring onions, cook lightly.

  6. Add red pepper, cook an extra few minutes.

  7. Add garlic, cook to allow flavours to fuse.

  8. Add mushrooms, allow to cook down a little.

  9. Add tomatoes, simmer on low heat for 5 minutes.

  10. Add olives & chopped basil, cook an extra minute or two.

  11. Serve.
