Recipe Ingredients for Mediteranean-style Chickpea Salad

3 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 tsp dijon mustard
2 garlic cloves
1/8 tsp. cayenne pepper
1/2 tsp. ground cumin
1/4 cup chopped fresh parsley
1 Salt and pepper to taste
1 cup canned chickpeas
1 cup feta cheese
1/2 cup pitted black olives
1/2 medium red onion
1/2 medium green pepper

Recipe Directions for Mediteranean-style Chickpea Salad

Combine the first 8 ingredients in a bowl and mis well to combine. Drain and rince the chickpeas, drain again. Add the remaining ingredients and toss to combine. Cover and refrigerate the salad until ready to serve. Gently toss again just before doing so.
