Recipe Ingredients for mediteranean picnic sandwiches

1 small eggplant, sliced
1 small zucchini, sliced
1 small yellow squash, sliced
1 tbsp olive oil
14 oz ciabatta bread
2 1/2 tbsp pesto
2 1/2 tbsp tapenade
2 roasted red peppers
4 oz part skim mozzarella, slices
2 tbsp balsamic vinegar

Recipe Directions for mediteranean picnic sandwiches

  1. Slice eggplant, zucchini, and squash lengthwise and grill using 1 tbsp olive oil (and Pam if necc). 3-5 minutes on each side until softened.

  2. Hollow inside of bread to make room for vegetables. Spread pesto on one side of bread, tapenade on other.

  3. Layer vegetables, red peppers, and mozzarella slices. Drizzle w/ balsamic vinegar. Press top and bottom of sandwich together and wrap tightly in plastic wrap. Place on baking sheet and weigh down w/ heavy skillet. Refrigerate 2 hours to overnight. Unwrap, slice, and serve.
