Use any fun shape of pasta, orzo also works nice.

Recipe Ingredients for Mediterainian Pasta/Orzo Salad

8 ounces pasta , uncooked
1/2 cup green olives, chopped
1/2 cup black olives, chopped
1 cup spinach, cut into ribbons
1/4 sun-dried tomatoes, sliced into strips
2 tbsp garlic, minced
1/2 cup feta cheese

Recipe Directions for Mediterainian Pasta/Orzo Salad

  1. Cook 1 cup pasta (or less orzo), rinse under cool water to shock pasta, drain and set aside to dry.

  2. When pasta is very dry Toss with other ingredients, mix with some evoo. Chill and serve.

  3. To make vegan, ignore the feta.
