Variations on Chickpea stew - lots of ways you can do this, this is just the last one I did.

Recipe Ingredients for Med Chickpea Stew

1 pound dried chickpeas
2 green peppers
1 red onion
2 cup,+chopped+or+sliced tomatoes
1 cup tomato sauce
1 tbs oregano
2 tbl olive oil
6 oz black olives
1 salt
1 pepper
1 tsp red pepper

Recipe Directions for Med Chickpea Stew

  1. Soak chickpeas over night per instructions.

  2. I use my Dutch oven on the stove. Start with the olive oil, when hot, add red pepper, black pepper garlic and onion. saute until onion starts to soften. Add green pepper, saute until softens. Add tomatoes, olives and chickpeas. I simmer on low heat until the chickpeas are soft - an hour. You could also bake or crockpot this if you wanted it it faster or slower.
