An easy pasta sauce based in a canned sauce making for a quick shortcut. TVP gives it a meaty flavor and texture, while all the veggies give a little complexity. Makes quite a but of sauce; I'm just a sauce-lover.

Recipe Ingredients for "Meaty" red pepper pasta sauce-- shortcut version

2 1/4 cups classico red pepper pasta sauce
1/4 cup TVP
1/8 tsp cumin
1/4 cup water
1/3 cup frozen mirepoix (green peppers, onions, celery finely chopped) blend
1/2 cup frozen spinach
2 cloves garlic
1/2 can mushrooms, drained
1 tsp basil

Recipe Directions for "Meaty" red pepper pasta sauce-- shortcut version

  1. Spray saucepan with oil.

  2. Add moirepoix and spinach; cook on medium until thawed through and partially cooked.

  3. Meanwhile, mix TVP, cumin, and water. Allow to absorb.

  4. Add garlic and drained mushrooms to saucepan and cook, stirring frequently.

  5. Add basil and pasta sauce.

  6. Simmer for 10 mins and serve over pasta.
