A ground bison, rice, salsa, and bean mix that is HIGH in protein and iron, while being decently low in calories. Can be made ahead of time and frozen in little packages for easy preparation.

3/4 cup brown rice
1 lb ground bison
1 medium onion, diced
1/2 cup salsa
15 ounce black beans

Recipe Directions for Meaty Protein Deliciousness

  1. Start rice simmering.

  2. Meanwhile, brown bison and onion together in a large skillet. Drain fat and return it to the skillet.

  3. Drain and rinse black beans; dump them and the salsa and rice into the skillet. Cook until heated through.

  4. Easy to make ahead of time to save for convenient meals. Also, it's rather filling so 158g might be too much for you!
