This is a great way to get picky eaters to eat some veggies.

Recipe Ingredients for Meatloaf w/ veggies

1 lb hamburger
1/2 cup mozzarella cheese
1 egg
1/4 cup shredded carrots
1/4 cup cauliflower
1/4 cup tomato
1/4 cup onion
1/4 cup bell pepper

Recipe Directions for Meatloaf w/ veggies

  1. In pan saute diced onion and bell pepper until just soft, then set aside to cool.

  2. Mix all ingrediance in large bowl until well combined. I will add a little of the beet juice thats left in a can to this, but it will not suffer if its not included.

  3. Shape into a loaf and place in a foil lined pan. This makes clean up much easier.

  4. bake at 350 for about 40 minutes or so time may very though depending on the size of the loaf.

  5. I serve this with mashpotates died purple with more of the beet juice (why waste the antioxidants) and some green beens or peas. Great healthy comfort food.
