A delicious veggie stuffed meatloaf with no egg and no filler grain.

Recipe Ingredients for Meatloaf: Veggie Packed

1 lb Lean Ground Beef
1/4 cup Shallots
15 Baby Carrots
1/2 Green Pepper
3 oz Tomato Paste
1 T Worcestershire Sauce

Recipe Directions for Meatloaf: Veggie Packed

  1. Put ground beef in a bowl.

  2. Chop each vegetable in a food processer/chopper separately, adding to meat as you go.

  3. Add tomato paste, Worcestershire sauce, salt and pepper, and any other seasonings you'd like. This can be taken in any direction- add ginger and braggs for an asian feel, tumeric or curry for indian, oregano and basil for italian.

  4. Knead all together.

  5. Shape into a loaf.

  6. Bake at 350 for 40 minutes.

  7. Let rest for 10 minutes.

  8. Serve and eat!
