Prepared as a batch, each mini-loaf serves 2.

Recipe Ingredients for Meatloaf

3 eggs
1/2 cup bread crumbs
1 medium onion
2 tsp basil
2 lb. lean ground beef
3 roma tomatoes
1/2 cup ketchup

Recipe Directions for Meatloaf

  1. Beat eggs, stir in all remaining ingredients mixing well.

  2. On waxed paper, shape mixture into four mini loaves.

  3. Wrap each tightly in foil and freeze for up to 2 months.

  4. To cook, thaw loaf, bake for 40-50 minutes at 350 until internal temperature is 160. Each loaf serves 2.
