Meatloaf recipe from Food Network Good Eats with Alton Brown.

Recipe Ingredients for Meatloaf

6 oz croutons, garlic flavored
1/2 tsp black pepper
1/2 tsp cayenne pepper
1 tsp chili powder
1 tsp thyme
1/2 yellow onion, chopped
1 carrot, chopped
3 cloves garlic
1/2 red pepper
18 oz ground chuck
18 oz ground sirloin
1 1/2 tsp kosher salt
1 egg
1/2 cup ketchup
1 tsp ground cumin
1 tsp worcestershire sauce
1 tsp hot pepper sauce
1 tbsp honey

Recipe Directions for Meatloaf

  1. Heat oven to 325.

  2. In food processor, combine croutons, peppers, chili powder and thyme. Pulse until mixture is a fine texture. Please mixture into large bowl. Combine onion, carrot, garlis, red pepper in food processor. Pulse until mixture is finely chopped, but not pureed. Combine vegetable mixture, gruond sirloin and chuck with bread crumb mixture. Season meat mixture with salt. Add egg and combine thoroughly, but avoid squeezing the meat.

  3. Pack this mixture into a 10'' loaf pan to mold the shape of the meatloaf. Onto a parchment paper lined baking sheet, turn the meatloaf out of the pan and onto the center of the tray. Insert a meat thermometer at a 45 degree angle into the top of the meatloaf. Avoid touching bottom of tray with probe. Set probe for 155 degrees.

  4. Combine ketchup, cumin, worcestershire, hot sauce and honey. Brush glaze onto meatloaf after it has been cooking for about 10 minutes.
