Southbeach meatloaf. Original recipe calls for 1/2 cup brown rice, but I don't think its really required.

Recipe Ingredients for Meatloaf

1 tablespoon extra virgin olive oil
1/2 onion, chopped
1 red bell pepper, chopped
1 pound lean ground beef
16 oz. chunky salsa
1 egg, beaten
1 teaspoon salt
1 teaspoon pepper
1 clove garlic, minced

Recipe Directions for Meatloaf

  1. brown onion and bell pepper in pan.

  2. combine all ingredients in a bowl

  3. bake at 350 for 45min
