meatloaf from mibook..you can possibly substitute ground chicken for beef and lower the calories. as of today, I have not figured out how long to cook it for if you substitute

Recipe Ingredients for meatloaf

2 lbs ground beef
1 onion
1 red pepper
3/4 cup oatmeal
8 oz. tomato sauce
1/2 cup skim milk
2 eggs
2 tsp. worcestershire sauce
1/4 cup ketchup

Recipe Directions for meatloaf

  1. preheat oven to 350 degrees

  2. chop onion-set a small amount aside to put on top of meatloaf

  3. chop the red pepper

  4. place 3/4 cup oatmeal in mixing bowl, moisten with 1/2 cup skim milk, set aside

  5. put beef, onion and pepper in a bowl. add oatmeal mixture

  6. beat the 2 eggs, then add to bowl

  7. add 2 tsp worcestershire sauce and 1/4 cup ketchup

  8. using hands, mix it all together. be careful not to mix too much.

  9. place mixture into baking pan. shape into a loaf about 5 inches wide

  10. pour 8 oz. can of tomato sauce over top of meatloaf. spread evenly

  11. place sliced onions on top

  12. place in oven and cook for 1 hour
