You can replace lean ground beef with ground turkey for an even leaner meatloaf.

Recipe Ingredients for Meatloaf

16 ounces lean ground beef
1 small onion, chopped
1/2 cup oatmeal
1/2 cup Barbecue sauce, low carb
1 medium tomato, pureed
3 egg whites
1/2 teaspoon cumin
4 ounces green chili pepper, undrained, chopped
1 teaspoon garlic, minced
1 teaspoon black pepper
1 teaspoon chili powder, Mexican seasoning

Recipe Directions for Meatloaf

Preheat oven to 400 degrees. Mix all ingredients in a large bowl. Shape into a loaf and place in a baking pan that has been lightly sprayed with cooking spray. Bake for one hour. Great for meatballs too!
