A tasty meatloaf with lots of veggies.

Recipe Ingredients for Meatloaf

1 lb ground beef
2 eggs
1 onion
1 green pepper
1 potato
1 carrot
2 cups oats
10 3/4 oz. tomato soup
2 T black pepper

Recipe Directions for Meatloaf

  1. Grate all the vegetables in a food processor. Change to the regular blade and add all other ingredients except for the ground beef. Process until fairly smooth.

  2. Mix in the ground beef until all is well mixed.

  3. Divide into 2 loaves. (I freeze one) Bake in a heavy loaf pan for 1 hour at 350 degrees.
