low fat low calorie meatloaf - tasty with tomato sauce and mustard

Recipe Ingredients for Meatloaf

1 onion
2 garlic cloves
3/4 cup breadcrumbs
120 g pumpkin
1 carrot
250 g extra lean ground beef
1 tbsp tomato paste
45 g mushroom
1 egg
1 tbsp tomato sauce

Recipe Directions for Meatloaf

  1. Preheat oven to 200 Celcius

  2. Cook onion for 2 minutes, then add garlic and cook for 3 minutes. Allow to cool.

  3. Mix together breadcrumbs, pumpkin, carrot, parsley, mince, worcestershire sauce, basil, tomato paste and cooled onion. Mix in egg and mushrooms.

  4. Transfer to non-stick loaf tin and bake for 1 1/2 hours, covering after 30 minutes with aluminium foil.
