A nicely flavoured and moist meatloaf.

Recipe Ingredients for Meatloaf

2 lb ground beef
1 cup,+cubes yam
1 onion, sauteed
2 cups breadcrumbs
1 tbs olive oil
2 eggs
2 tbs ketchup
1 tbs horseradish
3 tbs ketchup
1 tbs hot sauce

Recipe Directions for Meatloaf

  1. Prepare yam- microwave for 5 minutes, then peel or mash.

  2. sautee onions and let cool.

  3. Soak 2 cups of day old dry bread in a bowl of milk for 5 minutes, remove bread and squeeze out liquid/ or just use dried breadcrumbs.

  4. Mix all ingredients together, saving 2 tbs of ketchup, and the hotsauce for the topping sauce.

  5. shape loaf free-form like a flat football on a cookie sheet.

  6. spread a thin lyer of ketchupy sauce on the top.

  7. bake at 350 F for 1 hr- 1 1/2 hrs.

  8. I baked mine with foil over the meatloaf for 3/4 of the cooking time, then uncovered for the final cooking time.
