Meatloaf & Potato Wedge Dinner

Recipe Ingredients for Meatloaf & Potato Wedge Dinner

12 oz ground beef lean
4 tbsp green pepper finely chopped
8 tbsp onion finely chopped
2 egg whites
1 1/5 oz bread crumbs
2 tbsp pizza sauce for mix
4 tbsp pizza sauce for topping
400 grams red potato , wedges baked

Recipe Directions for Meatloaf & Potato Wedge Dinner

  1. Preheat oven 400F.

  2. Combine all ingredients except potatoes and mix well. Split into 4 equal servings and place in a muffin pan. The meatloaf mixture will sit 1-2 inches above pan.

  3. Cut up potatoes into wedges. Spray pan and potatoes with non-stick cooking spray. Season to taste. Our preference is seasoning salt, kosher salt and black pepper.

  4. Place both the meatloaf and potato pans in oven and bake for 25 minutes or until meatloaf juices run clear and potatoes are tender.
