Recipe Ingredients for Meatloaf Muffins

1 1/2 pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup italian bread crumbs
1/2 cup diced red peppers
1/2 cup diced green peppers
1 small grated carrot
2 medium button mushrooms, shredded
1/4 teaspoon chili powder
1/8 teaspoon garlic powder
1/8 teaspoon ground cumin
1/8 teaspoon dried oregano
1/4 teaspoon paprika
1/2 teaspoon pepper

Recipe Directions for Meatloaf Muffins

  1. Preheat oven to 350 degrees F (175 degrees C) and grease a muffin tray well.

  2. In a large bowl, combine everything (there will be 13 patties, fry the extra patty in a pan to taste and adjust seasonings) and scoop mixture evenly into each well.

  3. Bake at 350 degrees F (175 degrees C) for 1 hour. If desired, remove from oven at the 50 minute mark and glaze with whatever sauce you like, return to oven.
