Makes 9 muffins. Part turkey and part TVP. Savory and good with rice or potatoes.

Recipe Ingredients for Meatloaf Muffins with Cheese

1/4 cup textured vegetable protein
5 oz lean 92% hamburger
1/4 cup frozen green peppers, chopped, thawed
1/4 cup frozen onions, chopped, thawed
2 tbsp Worcestershire sauce
1/5 cup oatmeal dry
1 tsp chili powder
2 large egg whites
1 tsp sage
2 tsp garlic powder
1/4 cup 2% sharp cheese, shredded
1/4 cup ketchup

Recipe Directions for Meatloaf Muffins with Cheese

  1. Preheat oven to 400 degrees. Spray regular sized muffin tins with spray oil.

  2. Reconstitute TVP in 1/3 cup water.

  3. Crumble burger in bowl.

  4. Add peppers and onions (I use 1 cup frozen mirepoix mix).

  5. Add reconstituted TVP and mix well.

  6. Add oatmeal.

  7. Add spices, and sauce and mix well.

  8. Add egg whites and cheese. Mix well.

  9. Add 1/2 of ketchup and mix.

  10. Spoon into muffin tins.

  11. Squirt a dab of ketchup onto each muffin.

  12. Cook for 25 minutes. Internal temperature should be at least 180 degrees.
