Easy moist meat loaf. While baking you can put tomato sauce on top is you like.

Recipe Ingredients for meatloaf II

1 lb. lean ground beef
1 1/2 cups zucchini, shredded
1/2 cups egg beaters
1/4 cups salsa
1/4 cups onion, chopped
1/4 cups green pepper, chopped
1/4 cups Quick Barley

Recipe Directions for meatloaf II

  1. Mix it all together and put in square glass pan that has been sprayed with olive oil.

  2. Bake at 375 for 45 min.
