Low carb - flaxseed meal used instead of bread crumbs; no ketchup

Recipe Ingredients for Meatloaf with flax

1 egg
7/10 lb ground beef
3/20 lb ground veal
3/20 lb ground pork
1 c flaxseed meal
1 onion
1 carrot
1/4 c parmesan cheese
1 tsp salt
1/4 tsp pepper
1 c water

Recipe Directions for Meatloaf with flax

  1. Preheat oven to 350. Coat cooking vessel with cooking spray.

  2. Combine meat, flaxseed meal, onion, carrot, egg, cheese, salt, and pepper. Mix.

  3. Put in vessel and bake. (For mini meatloaves, makes 8, cook in muffin pan, and bake 20-25 min)
