This meatloaf packs your veggies & fiber in one yummy loaf! Great for those "Meat & Potato Only" guys!

Recipe Ingredients for Meatloaf (Diner-Style)

1 1/2 lb lean ground beef
2 large eggs (beaten)
1/2 c skim milk
2 T worcestershire sauce
1/3 c ketchup
1/3 c green peppers (diced)
1/3 c carrots (shredded)
1/2 c onions (diced)
1 garlic clove (minced)
1/2 c unprocessed bran
1/3 c seasoned bread crumbs

Recipe Directions for Meatloaf (Diner-Style)

  1. Pre-heat oven to 350 (F)

  2. Mix all ingredients together in bowl.

  3. Place mixture into loaf pan & press down evenly into pan.

  4. Bake in 350 oven for 40-50 minutes (until firm)

  5. Let cool & set for 10 minutes before removing from pan.

  6. Hint: best if made the day before. Refridgerate and slice when cold.

  7. May be topped with your favorite salsa, bbq sauce, etc...
