Recipe Ingredients for Meatloaf w/ carmelized onions and mushrooms

2 tsp extra virgin olive oil
160 g onion, chopped
3 garlic cloves, minced
2 tsp sugar
1/2 lb fresh mushrooms, sliced
1 1/2 lbs lean ground beef
8 oz tomato sauce
1/2 cup dry bread crumbs
66 g egg whites, lightly beaten
1 tsp dried basil
1 tsp salt
1/2 tsp pepper
1 tbsp worcestershire sauce

Recipe Directions for Meatloaf w/ carmelized onions and mushrooms

  1. preheat oven to 350. Spray baking sheeet with nonstick spray. heat 1 tsp of the oil in skillet, add onion, garlic, and sugar. cook stirring occasionally until golden, about 10 minutes.

  2. Transfer to a large bowl. Heat remaining oil and add mushrooms. cook stirring occasionally until browned, 6-7 minutes add to the bowl with the onion and let cool.

  3. stir in beef, tomato sauce, worcestershire sauce, bread crumbs, egg whites, basil, salt and pepper.

  4. transfer to baking sheet and form into loaf. spread tomato sauce over top. bake for 45-55 minutes.
