Meatless Spanish Rice Recipe

Makes 10 servings



Classic Spanish Rice without the meat; add beans, fish, chicken, or other protein as the diner desires. Note: 8 cups of the rice is the 2-1/2 cup dry yield. You can make this with leftover precooked rice. Yields 10 servings of about one and one half cups each.

Recipe Ingredients for Meatless Spanish Rice

8 cups white rice (2-1/2 cups dry)
2 tablespoons olive oil
2 tablespoons diced garlic
1 bell pepper
1 medium sized onion
8 ounces tomato sauce
4 cups water for dry rice preparation

Recipe Directions for Meatless Spanish Rice

  1. Note: If using precooked rice, do not add water. Saute the pepper and onion first, then add the rice, tomato sauce and prepare like a fried rice.

  2. Brown uncooked rice in the olive oil. See above note about preparing with leftover rice.

  3. Add the garlic, pepper and onion and cook until tender

  4. Add the tomato sauce and water, bring to boil for 5 minutes

  5. Turn down heat and simmer for 20 minutes, or until rice is tender.
