Meatless Spaghetti Recipe

Makes 6 servings



Add broccoli to last few minutes of spaghetti cooking if desired. Sprinkle with 1 tbsp parmesan cheese if desired. I found the recipe just a tad dry and would probably add a few more diced tomatoes next time, but this is very, very good!

Recipe Ingredients for Meatless spaghetti

8 oz whole wheat spaghetti
15 oz diced tomatoes, no salt added
3 tbsp tomato paste
15 oz light red kidney beans
1/2 can tomato soup
3 garlic cloves, minced

Recipe Directions for Meatless spaghetti

Drain tomatoes & kidney beans (together is fine since they will be used together). Mince garlic (I like a lot of garlic so if you don't cut it down to two cloves). Set aside. Cook spaghetti as per instructions. If desired add frozen broccoli during last few minutes of cooking. Drain spaghetti. Combine tomatoes, kidney beans, tomato paste, tomato soup and tomatoes in pot used to cook spaghetti. Add spaghetti to those ingredients and heat through. Serve with a salad.
