Meatless meatballs (sauce and spaghetti included)

Recipe Ingredients for Meatless Spaghetti and Meatballs

1 c ground walnuts
1 c mozzarella cheese, shredded
1 c Italian breadcrumbs
1/2 c fresh parsley
1/2 t pepper
1/2 clove garlic
1/2 t oregano
2 eggs
2 T tomato sauce
5 c tomato sauce
16 oz thin spaghetti

Recipe Directions for Meatless Spaghetti and Meatballs

  1. Preheat oven to 350 degrees.

  2. Combine walnuts, breadcrumbs, mozzarella, parsley, pepper, garlic, oregano, eggs, and 2 T tomato sauce in large bowl. Mix with hands until combined.

  3. Knead mixture into 1.5" balls and place on greased baking sheet.

  4. Bake meatballs for 30 minutes, or until browned completely.

  5. While meatballs are cooking, bring the remaining tomato sauce to a slow boil, then reduce to simmer.

  6. Add baked meatballs to sauce and cook for at least one hour.

  7. Prepare pasta as directed, strain, and serve with meatballs and sauce.
