A yummy twist on the traditional lasangna

Recipe Ingredients for Meatless Mexican Lasangna

2 cups frozen corn, thawed
1/2 cup black beans, rinsed and drained
14 1/2 oz diced tomatoes
4 oz chopped green chilies
2 teaspoons oregano
2 teaspoons ground cumin
4 tortillas
1 1/2 cups cheddar cheese

Recipe Directions for Meatless Mexican Lasangna

  1. You actually use a 15 oz can of black beans but what the analyzer was using beans that had a ton more calories than the ones I use so I had to lessen the amount to get the right calorie count, I use Bush's Black Beans.

  2. Combine the corn, black beans, Tomatoes, chilies, and spices in a bowl.

  3. Place two tortillas in an 11x7x2in baking dish coated with cooking spray. Spread with half the corn mixture

  4. Sprinkle with half the cheese

  5. Repeat the layers

  6. Bake, uncovered at 400 degrees for 15-20 min or until heated through

  7. Let stand for 5 minutes

  8. Top with a bit of lite sour cream
