Recipe Ingredients for Meatless Meatloaf

1 tbsp. olive oil
2/3 cup onion, minced
2 garlic cloves, minced
1 lb. extra-firm tofu, drained & patted dry
3 tbsp. ketchup
2 tbsp. tahini
2 tbsp. soy sauce
1/2 cup walnuts, ground
3/4 cup rolled oats
3/4 cup wheat gluten flour (vital wheat gluten)
2 tbsp. parsley, fresh, minced
1/2 tsp. sweet paprika
1/4 tsp. black pepper, freshly ground
2 tsp. ketchup for top

Recipe Directions for Meatless Meatloaf

  1. Preheat oven to 375 degrees. Lightly oil 9-inch loaf pan & set aside.

  2. In large skillet, heat 1 tsp. oil over medium heat. Add onion & garlic, cover & cook until softened, 5 minutes.

  3. In food processor, combine tofu, ketchup, tahini & soy sauce & process until smooth.

  4. Add reserved onion mixture & remaining ingredients. Pulse until well combined, but with some texture remaining.

  5. Scrape mixture into prepared pan. Press firmly into pan, smoothing the top. Drizzle top with 2 tsp. ketchup.

  6. Bake until firm & golden brown, about 1 hour. Let stand 10 minutes before slicing.
