Vegetarian meatloaf complete with tomato sauce

Recipe Ingredients for Meatless Meatloaf

1 small onion
1/2 green pepper
1 tbsp olive oil
8 oz (1 can) tomato sauce
1 cup soybeans, cooked
1 cup oats
1/2 cup walnuts, ground
174 g eggs (3 extra-large)
1 1/2 tsp salt
1/4 tsp pepper
1 1/4 cup onion, chopped
2 tbsp chopped parsley
1/2 cup ketchup
1 can (4oz) mushrooms, drained
1/2 tsp basil
1 tsp oregano

Recipe Directions for Meatless Meatloaf

  1. Sauce:

  2. Saute onions and green pepper in oil until lightly browned

  3. Add tomato sauce and bring to a boil

  4. Boil for 2-3 minutes

  5. Set aside

  6. Meatloaf:

  7. Mash soybeans with fork

  8. Add oatmeal, nuts, and eggs

  9. Mix well

  10. Blend mixture with remaining ingredients

  11. Place mixture in a greased 9x5x3 loaf pan

  12. Top with tomato sauce

  13. Bake at 350 for 50 minutes

  14. Makes 6 servings
