A change from plain boca burgers.

Recipe Ingredients for Meatless Meatloaf

1 1/3 cup quick-cooking Oats
1 cup tofu
142 g Boca burgers,(2 burgers) crumbled
1/4 cup green onion, chopped fine
1/2 cup egg beaters
1/4 cup walnuts
2 stalks celery, finely chopped(about 1 cup)
1/2 medium onion, finely chopped (about 3/4 cup)
2 tbsp Ketchup
2 tsp dried parsley
1 tbsp dijon mustard
3 tbsp low sodium soy sauce
1 tsp poultry seasoning
1 tsp garlic, minced

Recipe Directions for Meatless Meatloaf

  1. Preheat oven to 350 degrees

  2. spray fry pan with cooking spray

  3. saute celery, onion, green onion, garlic over medium heat until tender then remove from heat and cool.

  4. Grind walnuts to powder in processor and set aside.

  5. Finely dice and saute boca burgers till warm and then crumble finely and set aside to cool.

  6. Mash tofu with oatmeal, walnut powder and add egg beaters.

  7. stir in vegtables and boca crumbles

  8. stir in dried parsley, dijon mustard, soy sauce, and poultry seasoning.

  9. Coat 2 4x6 inch loaf pans with cooking spray.

  10. Pour in mixture and lightly pack in.

  11. Spread 1 tbsp ketchup over each loaf.

  12. Bake 55-60 min
