Green pea soup with no meat but lots of flavour.

Recipe Ingredients for Meatless Green Pea soup

250 grams Split Peas
1 Cube Stock Cubes
1 small Onions
1.2 medium raw Carrots
2 medium stalks(110 g) Celery
0.5 tbsp Extra Virgin Olive Oil
5 Glass Water
1 tbsp Corn Starch

Recipe Directions for Meatless Green Pea soup

  1. Wash and cook green peas on the side till soft and almost mushy.

  2. Dissolve the chicken stock cube n the 1L of hot water and simmer in a big pot with some chicken bones in there for extra flavour. Simmer this for about 30mnutes.

  3. Fry the onion, celery and carrot in the olive oil till soft and tender.

  4. Add the soft cooked peas to the vegetable mixture and mix and let simmer for 5 minutes.

  5. In the meantime, drain the stock and bone mixture and discard the chicken bones.

  6. Pour this mixture into the peas (leaving about 50ml aside) and mix, it should be watery. Let this simmer for about 20min.

  7. Use the remaining 50ml of stock and cornstach to make a thickening paste for the soup. Add the paste to the simmering soup and simmer for another 20min.

  8. The soup is ready to be served!
