Beans, vegetables, spices and Tomato Soup make a delicious vegetarian chili; serve with whole wheat pitas or toasts.

Recipe Ingredients for Meatless Chili

2 tbsp. vegetable oil
1 medium onion, chopped
1 celery stalk, chopped
38 oz kidney beans, drained and rinsed
2 cans (284 mL each) Tomato Soup
19 oz Diced Tomatoes, undrained
12 oz Corn, drained
1 tbsp. chili powder
1 cup shredded Cheddar or mozzarella cheese

Recipe Directions for Meatless Chili

  1. HEAT oil in large saucepan on medium-high heat. Add onion and celery; cook until vegetables are tender, stirring frequently.

  2. ADD remaining ingredients, except cheese. Bring to a boil, then reduce heat to medium-low and simmer 20 minutes or until heated through and slightly thickened. Stir occasionally.

  3. TOP with cheese.

  4. TIP: If desired, substitute 2 cups of chopped vegetables such as zucchini, peppers or mushrooms for the onion and celery.
