Tastes great - easy to make. Goes great with Rye bread recipe. Kind of thicker soup.

Recipe Ingredients for Meatless Chili

4 cups pinto beans, cooked
26 1/2 oz. tomatoes, crushed no salt
26 1/2 oz. chopped tomatoes, no salt
12 oz. tomato paste
1 onion, chopped
2 tbsp. garlic, minced
14 1/2 oz green beans, drained
5 carrots, sliced
32 oz. beef broth, fat free, low sodium
1/2 cup red wine vinegar
1/2 cup soy sauce

Recipe Directions for Meatless Chili

  1. Cook 2 cups of dry pinto beans for the 4 cups cooked. Soak overnight, then cook for 20 to 25 minutes. Drain. Saute onion and garlic in 1/4 cup beef broth until tender.

  2. Add remaining broth and remaining ingredients. Cook for 30-40 minutes.

  3. Season to taste with the following:ground ginger, paprika, rosemary, oregano, ground cumin, optional as desired

  4. Serving size 1 cup
