Beet, cabbage and vegetable soup. Makes 10 one-cup servings.

Recipe Ingredients for Meatless Borscht

2 tbsp olive oil
2 cups beets, diced
1 large carrot, diced
1 medium potato, diced
1 clove garlic, minced
1 liter stock, home made
1 tsp salt
1/3 head cabbage, shredded
1 tbsp brown sugar
28 ounce diced tomatoes
1/2 cup red wine
12 ounce sweet corn

Recipe Directions for Meatless Borscht

Throw all ingredients together in a pot. Use vegetable stock. Bring to a boil. Reduce heat and simmer until beets are tender. Serve with a dollop of sour cream (optional)
