A basic recipe for meatballs in sauce, which can be used for subs or over pasta. The key is mixing ground beef with ground pork! Vegetables are hidden away inside the meatballs, as well as adding texture to the sauce. Makes about 36 meatballs.

Recipe Ingredients for Meatballs for Subs

1 tbsp canola oil
1 1/4 lb ground beef (95% lean)
2/5 lb ground pork
1 egg
8 oz baby portabello mushrooms, sliced
1/5 lb shallots
1 lb green pepper
1/10 lb jalapeno
2 tsp minced garlic (divided)
1 tsp cumin
1 tsp Italian seasoning
1/4 cup grated Parmesan cheese
1 tsp black pepper
1/2 tsp chili powder
4 cups marinara sauce
5 oz tomato paste
1 tbsp brown sugar

Recipe Directions for Meatballs for Subs

  1. Place a large, nonstick frying pan on medium-high heat. Add oil.

  2. Mince half the mushrooms, shallot, green pepper and jalapeno very fine.

  3. Chop the other half of the vegetables into 1/4" pieces.

  4. Add minced vegetables to pan and fry until shallots turn clear and peppers are just beginning to brown. Remove from pan and let cool.

  5. Combine ground beef, pork, egg, seasonings, 1 teaspoon of the garlic, and minced vegetables in a large mixing bowl. It works best if you use your hands to mix.

  6. Put a large, nonstick pot on medium-high heat. You may also need an additional large, nonstick frying pan, depending on the size of your meatballs.

  7. Use an ice cream scoop or melon baller to form the meat mixture into balls. Roll the balls in your hand until the desired shape is achieved.

  8. Place meatballs in the bottom of the pot (and pan, if being used).

  9. Allow meatballs to brown, then turn and brown the other side. Continue until all sides of the meatballs are browned. Only cook each side until it is just browned - do not overcook!

  10. Once the meatballs are browned, add the remaining vegetables to the pot (and pan). Cook until shallots turn clear and peppers begin to brown.

  11. If using pan, add those vegetables and meatballs to the pot.

  12. Add marinara and tomato paste to pot. Stir in remaining seasonings. Allow sauce to get under meatballs and vegetables and deglaze the pot.

  13. Cover and reduce heat to low. Let simmer for at least one hour.

  14. Serve over prepared pasta, or on sub rolls with cheese. Delicious! :D
